Matcha Pistachio Snack Balls

Description

These little balls of goodness are power-packed and full of nutrients and antioxidants. They are not overly sweet but yet healthy, making them the perfect grab-and-go snack. You’ll love how the matcha combines with the pistachios and dates, keeping you well fuelled and providing a sustained release of energy throughout your day.  A bonus is that these delicious energy balls are vegan, gluten-free, and very easy to make.

 

Ingredients

¾ cup (96.75g) raw cashews

¼ cup (30.75g) raw pistachios, shelled

12 Medjool dates, pitted

2 teaspoons Fubuki Culinary Organic Matcha

¼ cup (20g) shredded coconut, unsweetened

1 tablespoon coconut oil

¼ cup pistachios, chopped (for rolling)

 

Method

  1. Place the ingredients (except chopped pistachios) into your food processor for one minute or until finely chopped and well combined, according to your preference.
  2. Using a cookie scoop, form balls out of the mixture and roll between your hands to create 12 evenly-sized balls.
  3. Roll the balls over the chopped pistachios, pressing the pistachios firmly into the snack balls.
  4. Place in the refrigerator or freezer for 10-15 minutes until firm. Enjoy!

Note: These snack balls can be kept in an airtight container in a cool part of your kitchen for up to 4 days.
